For the Crust:

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 large egg, lightly beaten
  • 1 cup Greek yogurt
  • 1/2 cup grated cucumber, squeezed dry
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh dill
  • 1 small garlic clove, minced
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, red onion, minced garlic, parsley, oregano, salt, pepper, and egg. Mix gently until just combined.
  3. Shape the mixture into 1-inch meatballs and place on the prepared baking sheet. Bake for 18-20 minutes, until cooked through and golden.
  4. Meanwhile, prepare the tzatziki: In a medium bowl, mix Greek yogurt, grated cucumber, lemon juice, dill, minced garlic, salt, and pepper. Refrigerate until ready to serve.
  5. Serve the meatballs warm with the homemade tzatziki sauce on the side.

Notes

You can customize the seasonings to taste.
