For the Crust:
- 1 large English cucumber, sliced into 1/4-inch rounds
- 4 oz block feta cheese, cut into small cubes
- 2 tbsp fresh dill, chopped
- 1/4 cup honey
- 1 tsp red pepper flakes
- 1 tbsp olive oil
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Arrange cucumber slices on a serving platter.
- Top each cucumber slice with a cube of feta cheese and a sprinkle of fresh dill.
- In a small saucepan, warm the honey over low heat. Stir in red pepper flakes and let infuse for 2 minutes, then remove from heat.
- Drizzle the hot honey over the cucumber and feta bites.
- Finish with a light drizzle of olive oil and season with salt and black pepper.
