For the Crust:
- 1 large cucumber, cut into 1-inch chunks
- 8 oz block feta cheese, cut into 1-inch cubes
- 1 cup cherry tomatoes
- 1/4 cup Kalamata olives, pitted
- 2 tbsp extra virgin olive oil
- 1 tsp dried oregano
- Salt and black pepper to taste
- Fresh dill for garnish
- Wooden skewers (6-inch)
Instructions
1. Prepare the Crust:
- Soak wooden skewers in water for 10 minutes to prevent burning.
- Thread one piece of cucumber, one cherry tomato, one cube of feta, and one olive onto each skewer.
- Arrange skewers on a serving platter.
- Drizzle with olive oil and sprinkle with oregano, salt, and pepper.
- Garnish with fresh dill and serve immediately.
