For the Crust:
- 2 ripe avocados
- 1 cup fresh basil leaves
- 2 cloves garlic
- 1 tablespoon lemon juice
- 1/4 cup olive oil
- Salt and pepper to taste
- 2 cups broccoli florets
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss broccoli, bell pepper, zucchini, and red onion with olive oil, salt, and pepper. Spread on the baking sheet and roast for 20-25 minutes.
- In a blender, combine avocado, basil, garlic, lemon juice, and olive oil. Blend until smooth and creamy. Season with salt and pepper as desired.
