For the Crust:
- 1 cup quinoa, cooked
- 8 oz block of feta cheese
- 1/2 cup pomegranate seeds
- 2 cups baby spinach
- 1/4 cup sliced almonds
- 1/4 cup fresh mint leaves
- 2 tbsp olive oil
- 1 lemon, juiced
- 1 tsp honey
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Cook quinoa according to package instructions and let cool.
- Brush feta block with olive oil and grill for 2-3 minutes per side until lightly charred.
- Whisk together lemon juice, remaining olive oil, honey, salt, and pepper to make the dressing.
- Assemble bowls with quinoa, spinach, grilled feta, pomegranate seeds, almonds, and mint.
- Drizzle with lemon dressing and serve immediately.
