A fusion dish combining grilled Mediterranean vegetables with melted cheese in a crispy tortilla, perfect for a quick and flavorful meal.

For the Crust:

  • 4 large flour tortillas
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 small red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat a grill or grill pan over medium-high heat. Toss the bell pepper, zucchini, red onion, and cherry tomatoes with olive oil, oregano, salt, and pepper. Grill the vegetables for 5-7 minutes until tender and slightly charred, then set aside.
  2. Place one tortilla on a clean surface. Sprinkle half of the mozzarella cheese evenly over the tortilla. Top with half of the grilled vegetables and half of the feta cheese. Cover with another tortilla.
  3. Heat a large skillet over medium heat. Carefully transfer the assembled quesadilla to the skillet and cook for 3-4 minutes per side, until golden brown and the cheese is melted. Repeat with the remaining tortillas and fillings.
  4. Remove the quesadillas from the skillet, cut into wedges, and garnish with fresh basil leaves. Serve immediately.

Notes

You can customize the seasonings to taste.
