Description

A refreshing summer dish featuring grilled watermelon layered with creamy whipped ricotta and tangy pickled onion vinaigrette.


Ingredients

For the Crust:

  • 1 small seedless watermelon, cut into 1-inch thick rounds
  • 1 cup ricotta cheese
  • 1/4 cup heavy cream
  • 1 tbsp honey
  • 1/2 red onion, thinly sliced
  • 1/4 cup apple cider vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1/4 cup olive oil
  • Fresh mint leaves for garnish

Instructions

1. Prepare the Crust:

  1. In a small bowl, combine red onion, apple cider vinegar, sugar, and salt. Let sit for at least 30 minutes to pickle.
  2. In a separate bowl, whip ricotta, heavy cream, and honey until light and fluffy. Refrigerate until ready to use.
  3. Preheat grill to medium-high. Grill watermelon rounds for 2-3 minutes per side until grill marks appear.
  4. Using a ring mold or cookie cutter, cut grilled watermelon into even circles.
  5. Assemble towers by layering watermelon, whipped ricotta, and pickled onions. Drizzle with olive oil and garnish with mint.

You can customize the seasonings to taste.
