A refined twist on a summer favorite. The smoky grilled watermelon pairs perfectly with creamy ricotta and tangy pickled onions.

For the Crust:
- 1 small seedless watermelon, cut into 1-inch thick rounds
- 1 cup ricotta cheese
- 1/4 cup heavy cream
- 1 small red onion, thinly sliced
- 1/4 cup apple cider vinegar
- 1 tbsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- Fresh mint leaves for garnish
Instructions
1. Prepare the Crust:
- In a small bowl, whisk together apple cider vinegar, honey, and salt. Add sliced red onions and let pickle for at least 30 minutes.
- In another bowl, whip ricotta and heavy cream until light and fluffy. Season with salt and pepper to taste.
- Brush watermelon rounds with olive oil and grill over medium-high heat for 2-3 minutes per side until grill marks appear.
- To assemble, layer grilled watermelon with whipped ricotta and pickled onions. Repeat to form towers.
- Drizzle with remaining pickling liquid and garnish with fresh mint leaves.
