Description

A refreshing summer dish featuring grilled watermelon layered with creamy whipped ricotta and tangy pickled onion vinaigrette.


Ingredients

For the Crust:

  • 1 small seedless watermelon, cut into 1-inch thick rounds
  • 1 cup ricotta cheese
  • 2 tbsp honey
  • 1/2 tsp lemon zest
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp apple cider vinegar
  • 1 tsp sugar
  • 1/4 cup olive oil
  • 1 tbsp fresh mint, chopped
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a small bowl, combine red onion, apple cider vinegar, and sugar. Let sit for 15 minutes to pickle.
  2. In another bowl, whip ricotta with honey and lemon zest until smooth. Season with salt and pepper.
  3. Heat grill to medium-high. Brush watermelon slices with olive oil and grill for 2 minutes per side until lightly charred.
  4. To assemble, place a grilled watermelon slice on a plate, top with a spoonful of whipped ricotta, then another watermelon slice. Repeat to form a tower.
  5. Drizzle with pickled onion vinaigrette and garnish with fresh mint.

Notes

You can customize the seasonings to taste.
