A refreshing summer dish featuring grilled watermelon layered with creamy whipped ricotta and tangy pickled onion vinaigrette.

For the Crust:
- 1 small seedless watermelon, cut into 1-inch thick rounds
- 1 cup ricotta cheese
- 2 tbsp honey
- 1/2 tsp lemon zest
- 1/4 cup red onion, thinly sliced
- 2 tbsp apple cider vinegar
- 1 tsp sugar
- 1/4 cup olive oil
- 1 tbsp fresh mint, chopped
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a small bowl, combine red onion, apple cider vinegar, and sugar. Let sit for 15 minutes to pickle.
- In another bowl, whip ricotta with honey and lemon zest until smooth. Season with salt and pepper.
- Heat grill to medium-high. Brush watermelon slices with olive oil and grill for 2 minutes per side until lightly charred.
- To assemble, place a grilled watermelon slice on a plate, top with a spoonful of whipped ricotta, then another watermelon slice. Repeat to form a tower.
- Drizzle with pickled onion vinaigrette and garnish with fresh mint.
