A refreshing summer dish featuring grilled watermelon layered with creamy whipped ricotta and topped with a tangy pickled onion vinaigrette.

For the Crust:
- 1 small seedless watermelon, cut into 1-inch thick rounds
- 1 cup ricotta cheese
- 2 tbsp honey
- 1/2 tsp sea salt
- 1/2 red onion, thinly sliced
- 1/4 cup apple cider vinegar
- 1 tbsp sugar
- 1/4 cup olive oil
- 1 tbsp fresh mint, chopped
- 1/2 tsp black pepper
Instructions
1. Prepare the Crust:
- In a small bowl, combine red onion, apple cider vinegar, and sugar. Let sit for at least 30 minutes to pickle.
- Preheat grill to medium-high heat. Grill watermelon rounds for 2-3 minutes per side until grill marks appear. Remove and let cool slightly.
- In a food processor, blend ricotta, honey, and sea salt until smooth and whipped.
- To assemble, place one grilled watermelon round on a plate, spread a layer of whipped ricotta, then repeat with another watermelon round.
- Top with pickled onions, drizzle with olive oil, and garnish with fresh mint and black pepper.
