Description

Thin slices of grilled zucchini rolled around a creamy, zesty ricotta filling, perfect as a light appetizer or side dish.


Ingredients

For the Crust:

  • 2 medium zucchinis, sliced lengthwise into 1/4-inch strips
  • 1 cup whole milk ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat a grill or grill pan to medium-high heat. Brush zucchini slices with olive oil and season with salt and pepper.
  2. Grill zucchini for 2-3 minutes per side until tender and grill marks appear. Remove and let cool.
  3. In a bowl, mix ricotta, Parmesan, chopped basil, lemon zest, lemon juice, and minced garlic. Season with salt and pepper.
  4. Lay a zucchini slice flat, spoon 1-2 tablespoons of the ricotta mixture onto one end, and roll up tightly.
  5. Arrange rollups on a serving platter, garnish with fresh basil leaves, and serve immediately or chilled.

Notes

You can customize the seasonings to taste.
