Description

A hearty, low-carb casserole featuring seasoned ground beef and tender zucchini, topped with melted cheese for a comforting meal.

For the Crust:

  • 1 lb ground beef
  • 2 medium zucchinis, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce (sugar-free)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onion and garlic, cook until softened.
  3. Add ground beef and cook until browned. Drain excess fat.
  4. Stir in marinara sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  5. Layer sliced zucchini in a baking dish. Top with the beef mixture.
  6. Sprinkle mozzarella and Parmesan cheeses evenly over the top.
  7. Bake for 25-30 minutes, until cheese is golden and zucchini is tender.
  8. Let cool for 5 minutes before serving.

Notes

You can customize the seasonings to taste.
