For the Crust:
- 1 cup mashed sweet potatoes
- 1/2 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup maple syrup
- 1/4 cup almond butter
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- Pinch of salt
Instructions
1. Prepare the Crust:
- Preheat the oven to 350°F (175°C) and line a mini muffin tin with liners.
- In a large bowl, mix together the mashed sweet potatoes, almond flour, cocoa powder, maple syrup, almond butter, vanilla extract, baking powder, and salt until smooth and well combined.
- Spoon the batter into the prepared mini muffin tin, filling each about 3/4 full, and bake for 30 minutes or until a toothpick inserted into the center comes out clean.
