For the Crust:

  • 1 cup mashed sweet potatoes
  • 1/2 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup maple syrup
  • 1/4 cup almond butter
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350°F (175°C) and line a mini muffin tin with liners.
  2. In a large bowl, mix together the mashed sweet potatoes, almond flour, cocoa powder, maple syrup, almond butter, vanilla extract, baking powder, and salt until smooth and well combined.
  3. Spoon the batter into the prepared mini muffin tin, filling each about 3/4 full, and bake for 30 minutes or until a toothpick inserted into the center comes out clean.
