For the Crust:
- 1 lb ground beef
- 1 medium onion, diced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 package (8.5 oz) cornbread mix
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tsp chili powder
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 1/2 cup milk
- 1 large egg
- 2 tbsp vegetable oil
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a large skillet, cook ground beef over medium heat until browned. Add onion and bell pepper, cooking until softened, about 5 minutes. Stir in black beans, corn, diced tomatoes, chili powder, garlic powder, salt, and pepper. Simmer for 5 minutes, then remove from heat.
- In a medium bowl, prepare cornbread batter by mixing cornbread mix, milk, egg, and vegetable oil until just combined.
- Spread the beef and vegetable mixture evenly in the prepared baking dish. Dollop sour cream over the top, then sprinkle with shredded cheddar cheese.
- Pour the cornbread batter over the filling, spreading gently to cover.
- Bake for 25-30 minutes, or until cornbread is golden brown and a toothpick inserted comes out clean. Let cool for 5 minutes before serving.
