For the Crust:
- 1 lb boneless, skinless chicken breasts, diced
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 2 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 cup cotija cheese, crumbled
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned, about 5-7 minutes. Remove chicken and set aside.
- In the same pot, add onion, garlic, and red bell pepper. Sauté until softened, about 5 minutes.
- Return chicken to the pot. Stir in black beans, corn, diced tomatoes, chicken broth, chili powder, smoked paprika, and cumin. Bring to a boil.
- Reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally, until flavors meld and chicken is tender.
- Season with salt and black pepper to taste. Serve hot, topped with crumbled cotija cheese, fresh cilantro, and a squeeze of lime.
