For the Crust:
- 8 oz feta cheese, crumbled
- 4 oz cream cheese, softened
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1 lb mixed vegetables (such as carrots, Brussels sprouts, and red onion), chopped
- 2 tbsp honey, plus extra for drizzling
- Salt and pepper to taste
- Assorted crackers and bread
- 1/4 cup toasted walnuts or almonds
- Fresh herbs (like thyme or rosemary) for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss chopped vegetables with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.
- In a food processor, combine feta, cream cheese, 1 tbsp olive oil, lemon juice, and garlic. Blend until smooth and creamy, about 2-3 minutes. Transfer to a serving bowl.
- Arrange the whipped feta, roasted vegetables, crackers, and nuts on a large board or platter. Drizzle everything with honey and garnish with fresh herbs.
- Serve immediately, allowing guests to build their own bites with the whipped feta, veggies, and accompaniments.
