A festive, shareable board featuring creamy whipped feta, honey-roasted vegetables, and an array of crackers and nuts for a stunning holiday appetizer.

For the Crust:

  • 8 oz feta cheese, crumbled
  • 4 oz cream cheese, softened
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 lb mixed vegetables (such as carrots, Brussels sprouts, and red onion), chopped
  • 2 tbsp honey, plus extra for drizzling
  • Salt and pepper to taste
  • Assorted crackers and bread
  • 1/4 cup toasted walnuts or almonds
  • Fresh herbs (like thyme or rosemary) for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss chopped vegetables with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.
  2. In a food processor, combine feta, cream cheese, 1 tbsp olive oil, lemon juice, and garlic. Blend until smooth and creamy, about 2-3 minutes. Transfer to a serving bowl.
  3. Arrange the whipped feta, roasted vegetables, crackers, and nuts on a large board or platter. Drizzle everything with honey and garnish with fresh herbs.
  4. Serve immediately, allowing guests to build their own bites with the whipped feta, veggies, and accompaniments.
