For the Crust:
- 4 large egg whites, at room temperature
- 1 cup granulated sugar
- 1/4 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 cup mixed fresh berries (strawberries, raspberries, blueberries)
- Fresh mint leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 200°F (95°C) and line baking sheets with parchment paper.
- In a clean bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add granulated sugar and vanilla, beating until stiff, glossy peaks form.
- Transfer meringue to a piping bag fitted with a star tip. Pipe 4-inch wreath shapes onto prepared baking sheets.
- Bake for 1.5 to 2 hours until meringues are dry and crisp. Turn off oven and let meringues cool inside for 1 hour.
- Whip heavy cream with powdered sugar until stiff peaks form. Spoon or pipe cream onto cooled meringue wreaths and top with fresh berries and mint.
