For the Crust:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1/4 cup balsamic vinegar
- 3 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 medium zucchini, sliced
- 1 medium yellow squash, sliced
- 1 red bell pepper, chopped
- 1 red onion, sliced
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). In a small saucepan, combine balsamic vinegar, honey, garlic, and thyme. Simmer over medium heat for 5-7 minutes until slightly thickened, then set aside.
- Toss zucchini, yellow squash, bell pepper, and red onion with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
- Season chicken breasts with salt and pepper. Heat remaining olive oil in a skillet over medium-high heat. Cook chicken for 5-6 minutes per side until browned and cooked through.
- Brush chicken with the honey-balsamic glaze during the last 2 minutes of cooking. Serve chicken alongside roasted vegetables, drizzling with extra glaze if desired.
