For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup fresh cranberries
- 1/4 cup honey
- 2 tbsp olive oil
- 1/2 cup crumbled feta cheese
- 1 tsp dried thyme
- Salt and black pepper to taste
- 1/4 cup chicken broth
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt, pepper, and thyme, then place in a baking dish.
- In a bowl, mix cranberries, honey, olive oil, and chicken broth. Pour over chicken.
- Bake for 25-30 minutes, until chicken is cooked through.
- Sprinkle feta cheese over the chicken and bake for an additional 5 minutes until cheese is slightly melted.
