For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh cranberries
  • 1/4 cup honey
  • 2 tbsp olive oil
  • 1/2 cup crumbled feta cheese
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 1/4 cup chicken broth

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, and thyme, then place in a baking dish.
  3. In a bowl, mix cranberries, honey, olive oil, and chicken broth. Pour over chicken.
  4. Bake for 25-30 minutes, until chicken is cooked through.
  5. Sprinkle feta cheese over the chicken and bake for an additional 5 minutes until cheese is slightly melted.
