For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 1 cup quinoa, rinsed
- 2 cups water or chicken broth
- 1 ripe mango, diced
- 1/4 cup honey
- Juice and zest of 2 limes
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and black pepper to taste
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- In a medium pot, bring water or broth to a boil, add quinoa, reduce heat, cover, and simmer for 15 minutes or until fluffy. Let cool slightly.
- In a bowl, whisk together honey, lime juice, lime zest, garlic, salt, and pepper. Marinate chicken in half of this mixture for 10 minutes.
- Heat olive oil in a skillet over medium heat. Cook chicken for 6-8 minutes until golden and cooked through, then toss with remaining honey-lime sauce.
- To assemble, layer quinoa, chicken, and mango in stacks on plates. Garnish with fresh cilantro and serve warm.
