For the Crust:
- 2 large apples (such as Honeycrisp or Fuji), cored and sliced into wedges
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 8 oz brie cheese, cut into 1-inch pieces
- 1/2 cup pecans, roughly chopped
- 2 tablespoons brown sugar
- 1 tablespoon butter, melted
- Fresh thyme sprigs for garnish (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). In a bowl, toss apple wedges with honey, olive oil, cinnamon, and salt until evenly coated.
- Arrange apples in a single layer on a baking sheet. Roast for 20 minutes, or until tender and lightly caramelized.
- While apples roast, mix chopped pecans, brown sugar, and melted butter in a small bowl. Set aside.
- Remove apples from oven. Top with brie pieces and sprinkle pecan mixture over everything. Return to oven for 5-7 minutes, until brie is soft and pecans are toasted.
- Garnish with fresh thyme if desired. Serve warm with crackers or crusty bread.
