For the Crust:

  • 2 large apples (such as Honeycrisp or Fuji), cored and sliced into wedges
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 8 oz brie cheese, cut into 1-inch pieces
  • 1/2 cup pecans, roughly chopped
  • 2 tablespoons brown sugar
  • 1 tablespoon butter, melted
  • Fresh thyme sprigs for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). In a bowl, toss apple wedges with honey, olive oil, cinnamon, and salt until evenly coated.
  2. Arrange apples in a single layer on a baking sheet. Roast for 20 minutes, or until tender and lightly caramelized.
  3. While apples roast, mix chopped pecans, brown sugar, and melted butter in a small bowl. Set aside.
  4. Remove apples from oven. Top with brie pieces and sprinkle pecan mixture over everything. Return to oven for 5-7 minutes, until brie is soft and pecans are toasted.
  5. Garnish with fresh thyme if desired. Serve warm with crackers or crusty bread.

Notes

You can customize the seasonings to taste.
