For the Crust:

  • 6 medium carrots, peeled and cut into 1-inch rounds
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 4 ounces Brie cheese, cut into small cubes
  • 1/4 cup hot honey (store-bought or homemade)
  • Fresh thyme sprigs for garnish
  • Toothpicks for assembly

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss carrot rounds with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes until tender and slightly caramelized.
  2. Let carrots cool slightly. Stack 2-3 carrot rounds on a toothpick, placing a cube of Brie between each layer to form “snowmen.” Repeat with remaining ingredients.
  3. Arrange stuffed carrot snowmen on a serving platter. Drizzle generously with hot honey and garnish with fresh thyme. Serve warm.
