For the Crust:
- 6 medium carrots, peeled and cut into 1-inch rounds

- Salt and black pepper to taste
- 4 ounces Brie cheese, cut into small cubes
- 1/4 cup hot honey (store-bought or homemade)
- Fresh thyme sprigs for garnish
- Toothpicks for assembly
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss carrot rounds with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes until tender and slightly caramelized.
- Let carrots cool slightly. Stack 2-3 carrot rounds on a toothpick, placing a cube of Brie between each layer to form “snowmen.” Repeat with remaining ingredients.
- Arrange stuffed carrot snowmen on a serving platter. Drizzle generously with hot honey and garnish with fresh thyme. Serve warm.
