A delightful blend of roasted autumn vegetables stacked into a visually stunning and flavorful dish.

For the Crust:

  • 2 medium sweet potatoes
  • 1 large butternut squash
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 teaspoons ground cinnamon
  • 1 teaspoon nutmeg
  • Fresh thyme for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes and butternut squash.
  3. In a bowl, toss the cubes with olive oil, salt, pepper, cinnamon, and nutmeg.
  4. Spread the vegetables on a baking sheet and roast for 30 minutes, or until tender and golden brown.
  5. Stack the roasted vegetables into towers on plates and garnish with fresh thyme before serving.
