For the Crust:
- 2 medium sweet potatoes
- 1 large butternut squash
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 teaspoons ground cinnamon
- 1 teaspoon nutmeg
- Fresh thyme for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- Peel and cube the sweet potatoes and butternut squash.
- In a bowl, toss the cubes with olive oil, salt, pepper, cinnamon, and nutmeg.
- Spread the vegetables on a baking sheet and roast for 30 minutes, or until tender and golden brown.
- Stack the roasted vegetables into towers on plates and garnish with fresh thyme before serving.
