A vibrant and flavorful dish featuring juicy grilled chicken topped with a fresh tropical pineapple salsa, served over a bed of greens for a bright and satisfying meal.

For the Crust:

  • 2 boneless, skinless chicken breasts
  • 1 cup fresh pineapple, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and black pepper to taste
  • 4 cups mixed greens or cooked rice
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder

Instructions

1. Prepare the Crust:

  1. Season the chicken breasts with chili powder, salt, and pepper. Heat olive oil in a skillet over medium-high heat and cook chicken for 6-7 minutes per side until fully cooked. Let rest for 5 minutes, then slice.
  2. In a medium bowl, combine diced pineapple, red bell pepper, red onion, jalapeño, cilantro, and lime juice. Mix well and season with salt to taste.
  3. Divide mixed greens or rice among four bowls. Top with sliced chicken and a generous spoonful of the tropical salsa. Serve immediately.
