For the Crust:

  • 1 sheet frozen puff pastry, thawed
  • 1 medium sweet potato, thinly sliced
  • 4 oz goat cheese, crumbled
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)
  • Fresh parsley for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out puff pastry on the prepared baking sheet. Arrange sweet potato slices in overlapping circles, leaving a 1-inch border. Drizzle with olive oil, sprinkle with thyme, salt, and pepper.
  3. Fold edges of pastry over the filling. Brush pastry edges with egg wash. Bake for 25-30 minutes, until golden and potatoes are tender.
  4. Remove from oven, sprinkle with goat cheese, and let cool 5 minutes. Garnish with parsley if desired and serve warm.

Notes

You can customize the seasonings to taste.
