For the Crust:
- 1 sheet frozen puff pastry, thawed
- 1 medium sweet potato, thinly sliced
- 4 oz goat cheese, crumbled
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
- Fresh parsley for garnish (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out puff pastry on the prepared baking sheet. Arrange sweet potato slices in overlapping circles, leaving a 1-inch border. Drizzle with olive oil, sprinkle with thyme, salt, and pepper.
- Fold edges of pastry over the filling. Brush pastry edges with egg wash. Bake for 25-30 minutes, until golden and potatoes are tender.
- Remove from oven, sprinkle with goat cheese, and let cool 5 minutes. Garnish with parsley if desired and serve warm.
