Instructions
1. Prepare the Crust:
- In a medium bowl, whisk together oat milk, maple syrup, lemon zest, lemon juice, vanilla extract, and salt until well combined.
- Add chia seeds to the mixture and whisk vigorously for 1-2 minutes to prevent clumping.
- Cover the bowl and refrigerate for at least 4 hours or overnight, stirring once after 30 minutes to ensure even thickening.
- Once set, stir the pudding and divide into serving glasses. Top with fresh berries or lemon slices before serving.
