A vibrant, tangy pasta dish featuring orzo tossed with lemon, creamy feta, sweet sun-dried tomatoes, and crunchy pine nuts for a quick and flavorful meal.

For the Crust:

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup pine nuts, toasted
  • 1/2 cup crumbled feta cheese
  • Zest and juice of 1 lemon
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste
  • 1/4 cup vegetable broth or water

Instructions

1. Prepare the Crust:

  1. Cook the orzo according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sun-dried tomatoes, sautéing for 2-3 minutes until fragrant.
  3. Add the cooked orzo to the skillet, stirring to combine. Pour in vegetable broth or water to moisten if needed.
  4. Remove from heat and stir in lemon zest, lemon juice, feta cheese, toasted pine nuts, and parsley. Season with salt and pepper.
  5. Toss everything together until well mixed. Serve warm or at room temperature.
