For the Crust:
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 3 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tsp dried thyme
- Salt and black pepper to taste
- 8 wooden or metal skewers
- 1 large cucumber, thinly sliced
- 1/2 red onion, thinly sliced
- 2 tbsp fresh dill, chopped
- 2 tbsp red wine vinegar
- 1 cup Greek yogurt
- 1/2 cucumber, grated and squeezed dry
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1 tbsp fresh mint, chopped
Instructions
1. Prepare the Crust:
- In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Add chicken cubes, toss to coat, and marinate for at least 30 minutes.
- Thread marinated chicken onto skewers. Preheat grill or grill pan over medium-high heat and cook skewers for 10-12 minutes, turning occasionally, until chicken is cooked through.
- For the cucumber salad, combine sliced cucumber, red onion, dill, and red wine vinegar in a bowl. Toss gently and season with salt and pepper.
- For the tzatziki, mix Greek yogurt, grated cucumber, lemon juice, minced garlic, mint, and a pinch of salt in a bowl. Chill until ready to serve.
- Serve chicken skewers with cucumber salad and tzatziki sauce on the side.
