A delightful cake featuring layers of lemon and pistachio with a surprise ricotta filling.

For the Crust:
- 1 cup all-purpose flour
- 1/2 cup ground pistachios
- 1 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 1/2 cup ricotta cheese
- 1 lemon, zest and juice
Instructions
1. Prepare the Crust:
- Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan.
- In a bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well between additions.
- Fold in the flour, ground pistachios, lemon zest, and juice, then mix until combined.
- Spread half of the batter in the cake pan. Add the ricotta in the center, spreading it out slightly and then cover with the remaining batter.
- Bake for 30 minutes or until a toothpick inserted into the cake comes out clean.
