Description

A delightful cake featuring layers of lemon and pistachio with a surprise ricotta filling.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup ground pistachios
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1/2 cup ricotta cheese
  • 1 lemon, zest and juice

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan.
  2. In a bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well between additions.
  3. Fold in the flour, ground pistachios, lemon zest, and juice, then mix until combined.
  4. Spread half of the batter in the cake pan. Add the ricotta in the center, spreading it out slightly and then cover with the remaining batter.
  5. Bake for 30 minutes or until a toothpick inserted into the cake comes out clean.

Notes

You can customize the seasonings to taste.
