For the Crust:

  • 1 cup ricotta cheese
  • 2 tablespoons lemon zest
  • 1/4 cup sugar
  • 1/2 teaspoon lavender flowers, chopped
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup milk

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350°F (175°C) and grease muffin tins.
  2. In a bowl, mix ricotta, lemon zest, sugar, lavender, vanilla, and eggs until smooth.
  3. Combine flour, baking powder, and salt, then gradually mix into the wet ingredients along with milk.
  4. Pour batter into muffin tins and bake for 25-30 minutes until golden. Cool and serve with powdered lavender sugar sprinkle.
