For the Crust:
- 1 lb carrots, peeled and halved lengthwise
- 2 tbsp olive oil
- 2 tbsp pure maple syrup
- 1 tbsp Dijon mustard
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 1/4 cup pecans, chopped
- 2 oz goat cheese, crumbled
- Fresh thyme for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, whisk together olive oil, maple syrup, Dijon mustard, garlic powder, salt, and pepper.
- Toss carrots with the maple Dijon mixture until evenly coated. Arrange in a single layer on the baking sheet.
- Roast for 25-30 minutes, flipping halfway, until carrots are tender and caramelized.
- While carrots roast, toast pecans in a dry skillet over medium heat for 3-5 minutes until fragrant.
- Transfer roasted carrots to a serving dish. Top with crumbled goat cheese, toasted pecans, and fresh thyme.
