Description

A rich and savory gratin featuring layers of sweet potatoes, yams, and beets glazed with maple and hot honey, topped with nutty Gruyere cheese.


Ingredients

For the Crust:

  • 2 medium sweet potatoes, thinly sliced
  • 2 medium yams, thinly sliced
  • 3 medium beets, peeled and thinly sliced
  • 1 cup Gruyere cheese, shredded
  • 1/4 cup maple syrup
  • 2 tbsp hot honey
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme leaves
  • Salt and black pepper to taste
  • 2 tbsp unsalted butter, cubed

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, toss sweet potato, yam, and beet slices with maple syrup, hot honey, heavy cream, garlic, thyme, salt, and pepper.
  3. Layer the vegetable slices evenly in the baking dish, sprinkling Gruyere cheese between layers.
  4. Dot the top with cubed butter and cover with foil. Bake for 25 minutes.
  5. Remove foil, bake another 10-15 minutes until top is golden and vegetables are tender. Let rest 5 minutes before serving.

Notes

You can customize the seasonings to taste.
