Description

A sweet and savory side dish featuring tender roasted acorn squash halves topped with a buttery maple pecan glaze.

For the Crust:

  • 2 medium acorn squash, halved and seeded
  • 2 tablespoons unsalted butter, melted
  • 3 tablespoons pure maple syrup
  • 1/2 cup chopped pecans
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place acorn squash halves cut-side up on the baking sheet. Brush with melted butter and drizzle with maple syrup.
  3. Sprinkle with cinnamon, nutmeg, salt, and pepper. Top evenly with chopped pecans.
  4. Roast for 25-30 minutes, or until squash is tender and pecans are toasted. Serve warm.

Notes

You can customize the seasonings to taste.
