For the Crust:
- 1.5 pounds parsnips, peeled and cut into 1-inch pieces
- 2 tablespoons olive oil
- 3 tablespoons pure maple syrup
- 1 tablespoon fresh thyme leaves
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss parsnips with olive oil, maple syrup, thyme, salt, and pepper until evenly coated.
- Spread parsnips in a single layer on the baking sheet. Roast for 25-30 minutes, stirring halfway, until tender and golden brown.
