- 2 tablespoons fresh thyme leaves
- 1/4 cup crumbled goat cheese (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the squash slices with olive oil, maple syrup, salt, and pepper until evenly coated.
- Arrange the squash slices in a single layer on the baking sheet. Roast for 20-25 minutes, until tender and lightly caramelized.
- Transfer the roasted squash to a serving platter, arranging them in a single layer. Sprinkle with toasted pecans, fresh thyme, and goat cheese if using.
- Serve warm or at room temperature as an appetizer or side dish.
