For the Crust:
- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 cucumber, diced
- 1 pint cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 cup Kalamata olives, pitted
- 8 oz feta cheese, crumbled
- 1/4 cup extra virgin olive oil
- 2 tbsp lemon juice
- 2 tbsp honey
- 1 tsp dried oregano
- Salt and black pepper to taste
- Fresh parsley or mint for garnish
Instructions
1. Prepare the Crust:
- Cook the quinoa: In a medium saucepan, bring the water or broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed. Fluff with a fork and let cool slightly.
- Prepare the vegetables: While the quinoa cooks, dice the cucumber, halve the cherry tomatoes, and thinly slice the red onion. Arrange these on a large board or platter along with the olives and crumbled feta.
- Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, honey, oregano, salt, and pepper until well combined.
- Assemble the board: Spread the cooked quinoa on one section of the board. Drizzle the honey dressing over the quinoa and vegetables. Garnish with fresh parsley or mint.
- Serve immediately, allowing guests to mix and enjoy the flavors together.
