Description

A vibrant and shareable board featuring fluffy quinoa, crisp vegetables, tangy feta, and a sweet honey drizzle, perfect for a light lunch or appetizer.

For the Crust:

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 cup Kalamata olives, pitted
  • 8 oz feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tbsp lemon juice
  • 2 tbsp honey
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • Fresh parsley or mint for garnish

Instructions

1. Prepare the Crust:

  1. Cook the quinoa: In a medium saucepan, bring the water or broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed. Fluff with a fork and let cool slightly.
  2. Prepare the vegetables: While the quinoa cooks, dice the cucumber, halve the cherry tomatoes, and thinly slice the red onion. Arrange these on a large board or platter along with the olives and crumbled feta.
  3. Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, honey, oregano, salt, and pepper until well combined.
  4. Assemble the board: Spread the cooked quinoa on one section of the board. Drizzle the honey dressing over the quinoa and vegetables. Garnish with fresh parsley or mint.
  5. Serve immediately, allowing guests to mix and enjoy the flavors together.
