A vibrant and healthy bowl featuring herbed lamb meatballs, fluffy rice, crisp vegetables, and creamy tzatziki sauce.


Ingredients

For the Crust:

  • 1 lb ground lamb
  • 1/2 cup cooked rice
  • 1/2 cup diced cucumber
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a bowl, mix ground lamb, oregano, garlic powder, salt, and pepper. Form into small meatballs.
  2. Heat olive oil in a skillet over medium heat. Cook meatballs until browned and cooked through, about 10-12 minutes.
  3. Prepare tzatziki by combining Greek yogurt, diced cucumber, lemon juice, and a pinch of salt in a small bowl.
  4. Assemble bowls by dividing rice among four bowls, topping with meatballs, cherry tomatoes, red onion, and parsley.
  5. Drizzle with tzatziki sauce and serve immediately.
