For the Crust:
- 1 lb ground lamb
- 1/2 cup cooked rice
- 1/2 cup diced cucumber
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 cup plain Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a bowl, mix ground lamb, oregano, garlic powder, salt, and pepper. Form into small meatballs.
- Heat olive oil in a skillet over medium heat. Cook meatballs until browned and cooked through, about 10-12 minutes.
- Prepare tzatziki by combining Greek yogurt, diced cucumber, lemon juice, and a pinch of salt in a small bowl.
- Assemble bowls by dividing rice among four bowls, topping with meatballs, cherry tomatoes, red onion, and parsley.
- Drizzle with tzatziki sauce and serve immediately.
