A delightful Mediterranean-inspired appetizer featuring creamy ricotta, fresh vegetables, and warm pita bread.


Ingredients

For the Crust:

  • 1 cup ricotta cheese
  • 4 pita breads, warmed
  • 2 tablespoons olive oil
  • 1 teaspoon lemon zest
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup Kalamata olives, pitted
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

1. Prepare the Crust:

  1. In a bowl, mix the ricotta cheese with olive oil, lemon zest, salt, and pepper until smooth and creamy.
  2. Arrange the pita breads, cherry tomatoes, cucumber slices, and olives on a large serving board.
  3. Spoon the ricotta mixture onto the board and garnish with fresh basil leaves. Serve immediately.

Notes

You can customize the seasonings to taste.
