For the Crust:
- 2 lbs baby potatoes, halved
- 3 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- Salt and black pepper to taste
- 1 cup plain Greek yogurt
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 2 tbsp fresh mint, chopped
- 1/4 cup extra virgin olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C). Toss potatoes with olive oil, oregano, paprika, cumin, salt, and pepper on a baking sheet.
- Roast potatoes for 25-30 minutes until crispy and golden, flipping halfway through.
- While potatoes roast, mix Greek yogurt, minced garlic, and lemon juice in a bowl. Season with salt and set aside.
- For the herb drizzle, blend parsley, dill, mint, and extra virgin olive oil until smooth. Season with salt and pepper.
- Spread garlic yogurt on a serving plate, top with roasted potatoes, and drizzle with herb sauce. Serve warm.
