- 2 cups fresh spinach, finely chopped
- 1 cup crumbled feta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup almond flour
- 1 large egg, beaten
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine spinach, feta, Parmesan, almond flour, oregano, garlic powder, and pepper. Mix well.
- Add beaten egg and olive oil, stirring until a thick, cohesive mixture forms.
- Drop tablespoon-sized portions onto the baking sheet, flattening slightly into crisp shapes.
- Bake for 18-20 minutes, or until edges are golden and crisps are firm. Let cool before serving.
