Description

A festive holiday salad featuring warm melted brie, sweet cranberries, crisp pears and apples, and delicate feta snowflakes, all tossed in a light vinaigrette.

For the Crust:

  • 6 cups mixed greens (such as arugula and spinach)
  • 1 ripe pear, thinly sliced
  • 1 crisp apple (like Honeycrisp), thinly sliced
  • 1/2 cup dried cranberries
  • 1 wheel of brie cheese (about 8 oz)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped walnuts, toasted
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350°F (175°C). Place the brie wheel on a baking sheet lined with parchment paper and bake for 10-12 minutes until soft and slightly melted.
  2. In a large salad bowl, combine the mixed greens, sliced pear, sliced apple, dried cranberries, and toasted walnuts.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper to make the vinaigrette.
  4. Drizzle the vinaigrette over the salad ingredients and toss gently to coat evenly.
  5. Remove the brie from the oven and let it cool slightly. Scoop or slice the melted brie and arrange it over the salad.
  6. Sprinkle the crumbled feta cheese on top to resemble snowflakes. Serve immediately while the brie is warm.
