For the Crust:
- 6 cups mixed greens (such as arugula and spinach)
- 1 ripe pear, thinly sliced
- 1 crisp apple (like Honeycrisp), thinly sliced
- 1/2 cup dried cranberries
- 1 wheel of brie cheese (about 8 oz)
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped walnuts, toasted
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat the oven to 350°F (175°C). Place the brie wheel on a baking sheet lined with parchment paper and bake for 10-12 minutes until soft and slightly melted.
- In a large salad bowl, combine the mixed greens, sliced pear, sliced apple, dried cranberries, and toasted walnuts.
- In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper to make the vinaigrette.
- Drizzle the vinaigrette over the salad ingredients and toss gently to coat evenly.
- Remove the brie from the oven and let it cool slightly. Scoop or slice the melted brie and arrange it over the salad.
- Sprinkle the crumbled feta cheese on top to resemble snowflakes. Serve immediately while the brie is warm.
