Delightful and savory mini Wellingtons filled with creamy burrata and enhanced with a vibrant pistachio-basil pesto.


Ingredients

For the Crust:

  • 4 burrata cheese balls
  • 1 sheet puff pastry, thawed
  • 1/2 cup fresh basil leaves
  • 1/4 cup shelled pistachios
  • 1/4 cup grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. Roll out the puff pastry and cut into four squares. Place a burrata ball in the center of each square.
  3. In a food processor, blend basil, pistachios, and Parmesan to create a pesto. Spread over burrata and wrap with pastry. Bake on a tray for 20-25 minutes.
