Ingredients

Scale

For the Crust:

  • 1 package (2 crusts) refrigerated pie dough
  • 1 cup pecans, chopped
  • 1/2 cup brown sugar, packed
  • 1/2 cup corn syrup
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Lightly grease a mini muffin tin.
  2. Roll out pie dough and cut into 24 rounds to fit the muffin cups. Press each round into a cup.
  3. In a bowl, mix pecans, brown sugar, corn syrup, eggs, melted butter, vanilla, and salt until well combined.
  4. Spoon about 1 tablespoon of the pecan mixture into each dough-lined cup.
  5. Bake for 18-22 minutes, or until the filling is set and the crust is golden.
  6. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
