For the Crust:
- 1 package (2 crusts) refrigerated pie dough
- 1 cup pecans, chopped
- 1/2 cup brown sugar, packed
- 1/2 cup corn syrup
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Lightly grease a mini muffin tin.
- Roll out pie dough and cut into 24 rounds to fit the muffin cups. Press each round into a cup.
- In a bowl, mix pecans, brown sugar, corn syrup, eggs, melted butter, vanilla, and salt until well combined.
- Spoon about 1 tablespoon of the pecan mixture into each dough-lined cup.
- Bake for 18-22 minutes, or until the filling is set and the crust is golden.
- Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
