For the Crust:
- 1 sheet frozen puff pastry, thawed
- 4 oz brie cheese, cut into small cubes
- 1/4 cup dried cranberries
- 2 tbsp honey, plus extra for drizzling
- 1 egg, beaten (for egg wash)
- Flour for dusting
- Fresh thyme or rosemary for garnish (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out puff pastry sheet to about 1/8-inch thickness. Cut into tree shapes using a tree-shaped cookie cutter (about 2-3 inches tall).
- Place half the tree shapes on the baking sheet. Top each with a cube of brie and a few cranberries, leaving a border. Brush edges with egg wash.
- Cover with remaining tree shapes, pressing edges gently to seal. Brush tops with egg wash.
- Bake for 12-15 minutes until golden and puffed. Let cool slightly, then drizzle with honey and garnish with herbs if desired. Serve warm.
