Description

This dish transforms king oyster mushrooms into scallop-like medallions served on a refreshing pea and mint purée.

For the Crust:

  • 8 large king oyster mushrooms
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 2 cups frozen peas
  • 1/4 cup fresh mint leaves
  • 1/4 cup water
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Slice the king oyster mushrooms into thick rounds resembling scallops.
  2. In a pan, heat olive oil over medium-high heat. Add the mushroom slices and cook until golden brown on both sides, about 3-4 minutes per side. Add soy sauce and cook for another minute. Remove from heat.
  3. In a pot, bring water to a boil and add the frozen peas. Cook for 5 minutes until tender. Drain and transfer peas to a blender along with mint leaves and a bit of salt and pepper. Blend until smooth, adding water if needed to reach desired consistency.

Notes

You can customize the seasonings to taste.
