For the Crust:
- 4 large russet potatoes, peeled and grated
- 1 small onion, grated
- 2 large eggs, beaten
- 1/4 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup vegetable oil (for frying)
Instructions
1. Prepare the Crust:
- Place grated potatoes in a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, combine potatoes, onion, eggs, flour, salt, and pepper. Mix well.
- Heat oil in a skillet over medium heat. Drop spoonfuls of the potato mixture into the hot oil, flattening slightly with the back of the spoon.
- Fry for 3-4 minutes per side until golden brown and crispy. Drain on paper towels.
- Serve warm with sour cream or applesauce.
