Description

Crispy, golden potato pancakes just like Nana used to make—simple, hearty, and full of comforting flavor.

For the Crust:

  • 4 large russet potatoes, peeled and grated
  • 1 small onion, grated
  • 2 large eggs, beaten
  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup vegetable oil (for frying)

Instructions

1. Prepare the Crust:

  1. Place grated potatoes in a clean kitchen towel and squeeze out excess moisture.
  2. In a large bowl, combine potatoes, onion, eggs, flour, salt, and pepper. Mix well.
  3. Heat oil in a skillet over medium heat. Drop spoonfuls of the potato mixture into the hot oil, flattening slightly with the back of the spoon.
  4. Fry for 3-4 minutes per side until golden brown and crispy. Drain on paper towels.
  5. Serve warm with sour cream or applesauce.

Notes
