For the Crust:
- 1 1/2 cups almond flour
- 1/4 cup melted coconut oil
- 2 tbsp maple syrup
- 2 cups fresh or frozen blueberries
- 1/2 cup chia seeds
- 1 can (13.5 oz) full-fat coconut milk
- 1/4 cup honey or agave
- 1 tsp vanilla extract
- Pinch of salt
Instructions
1. Prepare the Crust:
- In a medium bowl, mix almond flour, melted coconut oil, and maple syrup until crumbly. Press firmly into a pie dish and chill for 15 minutes.
- In a blender, combine blueberries, chia seeds, coconut milk, honey, vanilla, and salt. Blend until smooth and creamy.
- Pour the blueberry chia mixture over the chilled crust. Smooth the top with a spatula.
- Refrigerate the pie for at least 4 hours or until set. Slice and serve chilled.
