A creamy, dreamy no-bake pie with a nutty crust and a vibrant blueberry chia filling that sets perfectly in the fridge.

For the Crust:

  • 1 1/2 cups almond flour
  • 1/4 cup melted coconut oil
  • 2 tbsp maple syrup
  • 2 cups fresh or frozen blueberries
  • 1/2 cup chia seeds
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/4 cup honey or agave
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. In a medium bowl, mix almond flour, melted coconut oil, and maple syrup until crumbly. Press firmly into a pie dish and chill for 15 minutes.
  2. In a blender, combine blueberries, chia seeds, coconut milk, honey, vanilla, and salt. Blend until smooth and creamy.
  3. Pour the blueberry chia mixture over the chilled crust. Smooth the top with a spatula.
  4. Refrigerate the pie for at least 4 hours or until set. Slice and serve chilled.

Notes
