These creamy, no-bake bars combine the tropical flavors of coconut and lime with the wholesome goodness of chia seeds for a refreshing and healthy treat.

For the Crust:

  • 1 cup chia seeds
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/4 cup maple syrup
  • Zest and juice of 2 limes
  • 1/2 cup shredded coconut
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. In a medium bowl, whisk together coconut milk, maple syrup, lime zest, lime juice, vanilla extract, and salt until smooth.
  2. Stir in chia seeds and shredded coconut. Let the mixture sit for 10 minutes, then stir again to prevent clumping.
  3. Pour the mixture into a lined 8×8 inch baking dish, smooth the top, and refrigerate for at least 4 hours or until set. Cut into bars before serving.
