For the Crust:

  • 1 cup almond butter
  • 1/2 cup honey
  • 1/4 cup coconut oil
  • 2 cups rolled oats
  • 1/2 cup pumpkin seeds

Instructions

1. Prepare the Crust:

  1. In a saucepan over low heat, combine almond butter, honey, and coconut oil until smooth.
  2. In a large bowl, mix the rolled oats and pumpkin seeds. Pour the melted mixture over the oats and seeds, stirring until well combined.
  3. Press the mixture into a lined 8×8 inch baking dish. Refrigerate for at least 2 hours before cutting into bars.
