For the Crust:
- 1 cup almond butter
- 1/2 cup honey
- 1/4 cup coconut oil
- 2 cups rolled oats
- 1/2 cup pumpkin seeds
Instructions
1. Prepare the Crust:
- In a saucepan over low heat, combine almond butter, honey, and coconut oil until smooth.
- In a large bowl, mix the rolled oats and pumpkin seeds. Pour the melted mixture over the oats and seeds, stirring until well combined.
- Press the mixture into a lined 8×8 inch baking dish. Refrigerate for at least 2 hours before cutting into bars.
