For the Crust:
- 2 cups crushed shortbread cookies
- 1/2 cup melted butter
- 1 (14 oz) can sweetened condensed milk
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1 tsp vanilla extract
- 2 cups chocolate chips
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 cup whipped cream for topping
Instructions
1. Prepare the Crust:
- Mix crushed shortbread cookies with melted butter and press into the bottom of a 9×13 inch dish to form the base layer.
- In a saucepan, combine sweetened condensed milk, brown sugar, and unsalted butter. Cook over medium heat, stirring constantly, until thickened (about 10 minutes). Stir in vanilla extract and pour over the shortbread layer.
- Melt chocolate chips with heavy cream in a double boiler or microwave, stirring until smooth. Spread evenly over the caramel layer.
- Whip heavy cream with powdered sugar until stiff peaks form, then spread over the chocolate layer. Refrigerate for at least 4 hours or until set.
- Slice into squares and serve chilled, topped with additional whipped cream if desired.
